Grilled Chicken with Black Bean Mango Salsa

Another Pinterest fav!  This one takes a little more time to prep but totally worth it.  The salsa adds such a fresh taste to the chicken!

Scrubs By Night


For the chicken...
4 Chicken Breasts
salt and pepper to taste
3 cloves minced garlic
1 teaspoon cumin
1/2 teaspoon dried oregano
juice of 1 lime

For the salsa...
1/4 cup chopped red onion
3 tablespoons lime juice
salt to taste
1 tablespoon olive oil
1 cup black beans, rinsed and drained
1 ripe mango, peeled and diced
1/4 cup minced fresh cilantro
1 jalapeño, chopped (keep the seeds if you want it spicier)


Season chicken with salt and pepper and place in a non-reactive bowl with remaining chicken ingredients, toss well to coat and refrigerate at least 1 hour.

In a medium bowl, combine the red onion, lime juice, olive oil, and season with salt.  Mix well then combine with the remaining ingredients, refrigerate until ready to serve.

Discard chicken marinade before grilling.  Grill chicken, top with the mango black bean salsa, and enjoy!!
