BBQ Cranberry Chicken

This is another one of my easy, go to recipes! It's packed full of flavor and it actually makes enough for leftovers! Yes...this is a big deal in our house.

Ingredients:

5-6 boneless chicken breasts
2 tsp olive oil
1 large onion - diced
3-4 stalks celery - chopped
1-3 garlic cloves - minced (I use 3 because we love garlic!)
1 12-16oz bottle BBQ sauce (Have used anything from original to chipotle honey!)
1 can whole berry cranberry sauce
salt & pepper to taste

Directions:

Preheat oven to 360°

1. Season chicken with salt and pepper
2. Saute chicken in pan with 1 tsp olive oil on medium heat.  Once browned on both sides place in baking dish
3. Add remaining oil to same pan and saute onion and celery until tender
4. Add minced garlic, cook 1 minute
5. Add cranberry sauce and mix until melted
6. Add BBQ sauce and bring to a boil
7. Pour over chicken and bake for 1 hour!


I used 4 larger chicken breasts last time and ended up with lots of extra sauce!  We saved the sauce and cooked up extra chicken a couple days later to dip in the sauce.  You can play with this recipe if you want it to be sweet or spicy, cranberry-y or bbq-y! Love simple recipes packed with flavor!
